
To celebrate Superbowl XLIX this weekend we mixed up a little cocktail in honor of the reigning Champion Seattle Seahawks. A little blue and green with a dash of rum equals a winner cocktail that will impress even your biggest rival.
Add the sugar cubes (you can use simple syrup if you do not have sugar cubes), blueberries, mint, and lime juice into a cocktail shaker.
Muddle (smash) the mixture. You will see the blueberries burst and release their juices and the amazing smell of mint will delight your senses.
We used a local Texas dark rum here but you can certainly use a light rum.
Add your favorite club soda. We found this Q Soda at Whole Foods.
Use lots of ice in a beautiful glass and pour all of the mixture in the glass. If you are a no pulp kind of drinker you could certainly strain the pulp, but we love the fragrance of the mint and the little bits of blueberry.
Garnish with some whole fresh blueberries and a slice of lime.

Serves 1
Ingredients:
2 sugar cubes per glass,
6-8 blueberries,
8-10 mint leaves,
1 oz lime juice,
2 oz dark or light rum,
Club Soda,
Ice,
Extra blueberries and lime slices for garnish.,
Instructions:
Add sugar cubes, mint, blueberries, and lime juice to a cocktail shaker. Muddle till fragrant and blueberries have released their juices. (Do not over muddle.)
Add rum and club soda to taste. Pour over ice (you can strain the mixture at this point) and add garnish.
